Clean Food Challenge: Days 5 & 6

Sorry, Hen and I are battling colds and its getting hard to keep up with all the blogging. But I continue to do my best to eat as cleanly as possible (with a Girl Scout cookie or two thrown in there - those things are impossible to resist).

Day 5's Meal: Dinner (with bonus Lunch!)

Before I get to the meal which I originally planned on highlighting, I have to stop and mention the lunch I ate. It was so delicious. I bought this soup from Target:

It was wonderful! Pretty cheap, all natural, and filling! Perfect for this challenge.

OK, back to dinner. I made a Shepard's Pie using ground turkey, frozen veggies, and mashed potatoes. I made dairy free mashed potatoes thanks to a trick I learned from my dear friend Rosemary over on Cooking off the beaten path. Instead of mixing the potatoes with butter and milk, mix them with olive oil and chicken stock! They are awesome this way, and Hen and I can both enjoy them.

The topping for the Shepard's Pie is just ketchup. The ketchup wasn't totally clean, but sadly it wasn't in my budget this week to buy a whole new bottle.

Day 6's Meal: Dinner

Tonight, we had a family favorite around here for dinner. Breakfast for dinner, or brinner as we call it. So it was scrambled eggs, with sausage, and a roll! Yummy! I don't know why, but there is just something about eating breakfast all day that I love! And, I ate it so fast, I didn't even think to take a picture!
